Ingredients
  

  • 3 cups day-old jasmine rice chilled, preferably refrigerated overnight
  • 2 tbsp neutral cooking oil options include vegetable, canola, or peanut oil
  • 2 large cloves of garlic finely minced
  • 1/2 medium onion diced small
  • 2 large eggs beaten until just combined
  • 5 oz / 150 g small shrimp raw or pre-cooked or thinly sliced chicken breast
  • 3 scallions green onions, chopped into 4 cm / 1.5” pieces
  • 1/2 tsp white pepper for a mild heat and depth
  • 1 tsp sesame oil adds a nice nutty aroma

Choose One Sauce Blend

  • - Sauce Option 1: 1 1/2 tbsp soy sauce + 1 1/2 tbsp oyster sauce
  • - Sauce Option 2: 2 tbsp fish sauce + 1 1/2 tbsp oyster sauce + 1 tsp sugar
  • - Sauce Option 3: 1 1/2 tbsp light soy sauce + 1 1/2 tbsp Thai seasoning sauce

Optional Garnishes

  • - Crisp cucumber slices
  • - Fresh tomato wedges
  • - Chopped fresh cilantro
  • - Lime wedges

Notes

- Use Day-Old Rice: Freshly cooked rice can turn mushy when stir-fried. Day-old rice has the perfect texture.
- High Heat is Key: Stir-frying requires high heat for that signature smoky flavor. Don't be afraid to crank it up!
- Add Colorful Veggies: Bell peppers, carrots, or peas can boost the nutrition and aesthetics of your dish.
- Customize Your Protein: Feel free to experiment! Tofu, pork, or even leftover meats work wonderfully.
- Taste as You Go: Adjust sauces and seasoning to your preference. Everyone's palate is different—some may like it saltier or sweeter.
