- 1 pint neutral oil for deep frying
- ⅓ cup 48 g toasted white sesame seeds
- 1 ¼ cups 130 g glutinous rice powder
- ¼ cup 50 g granulated white sugar
- 1 teaspoon vanilla extract
- 1 teaspoon 4 g light neutral oil
- Just under ½ cup 110 ml water
- ½ teaspoon ground cardamom
Step 1: Prepare Your Workspace
Step 2: Make the Dough
In a mixing bowl, combine glutinous rice flour, granulated sugar, and ground cardamom (if using). Mix well. Gradually add water and one teaspoon of oil, mixing until a soft dough forms. You want a texture that is pliable but not sticky. If it's too dry, add a little more water.
Step 3: Shape the Balls
Divide the dough into equal portions, about the size of golf balls. If you're using a filling, flatten each ball slightly, place a small amount of red bean paste in the center, and fold the edges over to seal. Roll them gently in your palms to smooth out any imperfections.
Step 4: Coat with Sesame Seeds
Step 5: Heat the Oil
In a deep pot, heat the neutral oil until hot but not smoking. To test the temperature, drop a small piece of dough into the oil. If it rises to the surface, you’re ready to fry.
- Use fresh sesame seeds: They're the star of this dish, so freshness really matters. Toasting them yourself will elevate their flavor.
- Monitor oil temperature: If the oil is too hot, the outer layer will burn before cooking the inside. If it’s not hot enough, they will absorb too much oil and become greasy.
- Try variations: While sweet fillings are classic, experimenting with savory options like black sesame paste can add a twist.
- Don’t rush: Take your time shaping the balls to ensure they are well-sealed. This prevents the filling from leaking during frying.
- Be cautious: Hot oil can be dangerous. Always keep children away from the cooking area and use a thermometer for accuracy.
