  • 1 lime cut into wedges for serving
  • 3 tablespoons extra virgin olive oil
  • 4 boneless skinless chicken breasts (approximately 2 pounds), pounded to an even thickness of ½ inch
  • 3 tablespoons silver tequila
  • 1 tablespoon freshly grated lime zest from about 2 limes
  • 4 cloves garlic finely chopped
  • teaspoons ground ancho chili powder
  • ½ teaspoon ground coriander seed
  • 1 teaspoon smoked paprika
  • ¼ teaspoon dried oregano leaves
  • teaspoons kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 teaspoons agave nectar
  • 1 tablespoon chopped fresh cilantro for garnish

  • Before diving in, let’s set the stage for a successful cooking experience. Making this chicken is straightforward, but it’s the attention to detail that makes it exceptional.

Step 1: Marinate the Chicken

  • Start by mixing the marinade. In a spacious bowl, combine the olive oil, tequila, lime zest, garlic, ancho chili powder, ground coriander, smoked paprika, oregano, salt, pepper, and agave nectar. Stir until well combined.
  • Place the chicken breasts in the mixture, ensuring they are fully coated. Cover the bowl with plastic wrap and let it marinate in the fridge for at least 30 minutes; an hour is even better.

Step 2: Prepare Your Grill or Pan

  • While the chicken is marinating, get your grill or skillet ready. If you’re using a grill, preheat it to medium-high. For a skillet, place it on medium heat and add a drizzle of olive oil. Let it heat until it’s shimmering.

Step 3: Cook the Chicken

  • Once your chicken has soaked up the flavors, take it out of the marinade. Shake off any excess marinade. Place the chicken on the grill or into the skillet. Cook for about 6-7 minutes on each side until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

  • Once cooked, transfer the chicken to a plate and cover it loosely with foil. Let it rest for about 5 minutes. This step allows the juices to redistribute, ensuring your chicken remains juicy.
