  • 1 pound medium shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1/2 onion finely chopped

  • 1 teaspoon smoked paprika for a smoky flavor
  • Juice of 1 lime
  • 1/2 cup shredded Mexican cheese blend
  • A small bunch of fresh cilantro chopped
  • 4 soft corn tortillas
  • 1/4 teaspoon red pepper flakes for a little heat

Step 1: Prepare the Shrimp

  • Begin by heating the olive oil in a skillet over medium heat. Toss in the chopped onion and sauté until translucent, usually about 5 minutes. Then, add the shrimp to the skillet. Season with salt, pepper, cumin, and smoked paprika. Stir frequently until the shrimp are cooked through—this should take about 3-4 minutes.

Step 2: Add Lime and Cilantro

  • Once your shrimp are cooked, squeeze the lime juice over them, and stir in the chopped cilantro. The acid from the lime brightens the flavors. Remove this delightful mixture from the heat and set it aside.

Step 3: Assemble the Quesadilla

  • Grab your tortillas. On half of each tortilla, sprinkle half of the shredded cheese, then a generous serving of the shrimp mixture. Top it off with the remaining cheese before folding over the other half. This layering ensures gooey cheese binds everything together.

Step 4: Cook the Quesadilla

  • Wipe out the skillet, then return it to medium heat. Place the filled tortilla back in the skillet. Cook until each side is crispy and golden, about 3 minutes per side. The melted cheese will create a wonderful binding.

Step 5: Serve

  • Once cooked, transfer the quesadilla to a cutting board. Slice into wedges. Serve immediately, perhaps garnished with extra cilantro or a lime wedge on the side.

Notes

  • Freshness: Fresh shrimp makes all the difference. If you can find wild-caught shrimp, go for it.
  • Don’t Overcrowd: If you’re making multiple quesadillas, cook them one at a time to ensure they crisp up nicely.
  • Use a Panini Press: If you have one, a panini press can provide an even crispier result on both sides.
  • Taste as You Go: Adjust the seasoning to your liking. If you love heat, add more red pepper flakes.
  • Serve Warm: For the best experience, serve these quesadillas warm. They lose texture and flavor if left to cool too long.
