When I first stumbled upon QDOBA’s famous salsa verde, I didn’t realize I was about to embark on a flavor journey.

- 1 ½ pounds tomatillos approximately 12 medium, husked and rinsed
- ½ cup finely chopped white onion around ½ medium onion
- ¼ cup loosely packed fresh cilantro leaves add more if you’re a cilantro lover
- 1 to 2 medium jalapeños stems removed (omit for a mild salsa; use 1 for medium heat and 2 for a spicy kick; the heat level will vary based on the peppers)
- 2 tablespoons to ¼ cup freshly squeezed lime juice from 1 to 2 medium limes, adjusted to taste
- ½ to 1 teaspoon sea salt adjusted to taste
- 1 teaspoon ground cumin for a warm earthy flavor
- 1 tablespoon honey or agave syrup to balance the acidity
- Optional: 1 to 2 diced avocados for a creamy avocado salsa verde

Next, throw in the finely chopped white onion, cilantro, and jalapeños into the blender. Click that lid back on. Carefully pulse to mix these gems into the tomatillos.
Step 4: Season to Perfection
Now it’s time to add the lime juice, sea salt, ground cumin, and honey or agave syrup. Blend until everything is combined. Be sure to taste it at this step. If it needs more salt or sweetness, feel free to adjust.
Step 5: Optional Avocado Addition
- Choose Ripe Tomatillos: Look for firm tomatillos that feel slightly heavy for their size. Their skin should be bright green and free from brown spots.
- Control the Heat: If you’re unsure about heat levels, start with one jalapeño. You can always add more later.
- Let It Rest: The longer salsa verde sits, the better the flavors develop. Make it a day ahead for a knockout dish.
- Experiment with Ingredients: Feel free to swap out ingredients or add others based on your preference. Mango, for example, can add a fruity flair!
- Store in an Airtight Container: Salsa verde doesn’t last as long as some other salsas. Aim to consume it within a week.
