Ingredients
  

  • 4 juicy limes
  • 2-4 tablespoons of creamy mayonnaise
  • 1 bunch of fresh cilantro finely chopped
  • 1/4 cup crumbled cotija cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 2 jalapeños seeded and minced
  • 6 ears of corn husked and char-grilled
  • 1 teaspoon ground chili powder
  • 1 teaspoon smoked paprika
  • 2-4 tablespoons of tangy sour cream
  • 1/4 cup diced red onion
  • 1 tablespoon lime zest
  • 1 teaspoon sea salt

Instructions
 

Step 1: Prepare the Corn

  • Start by husking the corn. Remove all the silk and husk. Then, char-grill it over medium heat until you see those lovely grill marks. This usually takes about 10-15 minutes, giving it a good rotation to ensure even charring.

Step 2: Mix the Sauce

  • While your corn is grilling, combine the mayonnaise, sour cream, minced jalapeños, lime juice, garlic powder, black pepper, chili powder, smoked paprika, lime zest, and sea salt in a large mixing bowl. Stir until everything is well combined.

Step 3: Add Cheese and Onion

  • Next, fold the crumbled cotija cheese and diced red onion into your sauce mixture. This adds texture and flavor that’ll elevate your corn dish.

Step 4: Coat the Corn

  • Once the corn is perfectly grilled, take it off the heat and let it cool for a moment. Now, using a brush or your hands, coat the corn with the sauce mixture generously. Make sure to cover every nook and cranny.

Step 5: Garnish with Cilantro

  • Sprinkle the freshly chopped cilantro over the coated corn for a fresh pop. You can also add more cotija cheese on top if you like things extra cheesy.

Step 6: Serve & Enjoy!

  • Grabbing the corn by the cob, serve it on a platter. It’s best enjoyed warm, but it can also be eaten cold. Relish every bite!
