Equipment

  • Bowl

Ingredients

  • 1/4 cup freshly chopped cilantro
  • 1/4 small red onion finely chopped
  • 1 tablespoon white vinegar
  • 1 tablespoon of granulated sugar
  • Juice of 1 lime or 2 tablespoons of lime juice
  • 1 medium cucumber cut into 1/4-inch to 1/2-inch chunks
  • 1 medium red bell pepper chopped into 1/4-inch to 1/2-inch pieces
  • 1 jalapeño minced
  • 2 cups fresh or frozen mango diced into 1/4-inch to 1/2-inch cubes
  • Pinch of sea salt
  • 1/4 cup pomegranate seeds

Instructions

Step 1: Prepare Your Ingredients

  • Start by gathering all your ingredients. Chop your mango, cucumber, red bell pepper, jalapeño, and red onion. Ensuring your chopping is uniform will enhance the overall texture in your salsa.

Step 2: Mix the Vegetables

  • In a large bowl, combine the diced mango, cucumber, chopped bell pepper, minced jalapeño, and red onion. Use a spatula or a large spoon to gently mix them together. You want to avoid squishing your mango too much.

Step 3: Add the Dressing

  • In a separate small bowl, mix the lime juice, white vinegar, sugar, and a pinch of sea salt. Stir until the sugar dissolves completely. This will create a tangy dressing that will tie your salsa together.

Step 4: Combine Everything

  • Pour your dressing over the chopped ingredients and gently fold them together. Be careful not to mash the mango. You want the salsa to look fresh and vibrant.

Step 5: Add the Cilantro and Pomegranate Seeds

  • Just before serving, fold in the chopped cilantro and pomegranate seeds for that finishing touch. They add color and an extra layer of flavor.

Step 6: Chill (Optional)

  • While you can serve it immediately, letting the salsa chill for at least 30 minutes in the refrigerator permits the flavors to meld together beautifully.

Notes

To make the most out of your QDOBA Mango Salsa, keep these tips in mind:
  • Choose Ripe Mangoes: The riper the mango, the sweeter the salsa. Look for slight give when you press the fruit.
  • Adjust Heat to Preference: If you prefer milder salsa, reduce the amount of jalapeño or remove the seeds.
  • Chill for Flavor: Allowing the salsa to sit enhances the flavors, making it even better!
  • Experiment with Textures: If you want more crunch, consider adding diced bell peppers or even some chopped celery.
  • Watch the Salt: Opt for sea salt for a cleaner taste. You can always add more, but you can’t take it out!
