  • 2 cups basmati rice unrinsed, or long-grain white rice, well-rinsed
  • Pinch of sea salt
  • 1 small bay leaf
  • ½ teaspoon ground cumin
  • ½ teaspoon finely grated lime zest
  • 2 tablespoons freshly chopped cilantro
  • 1 ½ tablespoons freshly squeezed lime juice from 1–2 limes
  • 1 ½ tablespoons freshly squeezed lemon juice from 1–2 lemons

Instructions
 

Step 1: Prepare the Rice

  • Begin by rinsing your rice in cold water until the water runs clear. This removes excess starch and prevents the rice from becoming overly sticky. Combine the rinsed rice with a pinch of sea salt, the bay leaf, and ground cumin in a medium saucepan.

Step 2: Add Water and Cook

  • Pour in 4 cups of water into the saucepan. Bring it to a rolling boil over medium-high heat. Once boiling, reduce the heat to low.
  • Cover the saucepan and let it simmer for about 15-20 minutes. Allow the rice to absorb all the water.

Step 3: Fluff the Rice

  • When the rice has cooked and absorbed all the water, remove the saucepan from heat. Let it sit covered for about 5 minutes to steam. After this resting period, use a fork to fluff the rice gently, breaking up any lumps.

Step 4: Stir in the Flavor

  • Take out the bay leaf. Add in the lime zest, lime juice, lemon juice, and freshly chopped cilantro. Stir gently until everything is well combined.
