Ingredients
  

  • 2 lbs chicken breasts boneless and skinless, flattened to an even thickness
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons adobo sauce from a can of Chipotle peppers in adobo
  • 1 tablespoon smoked chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried oregano or Italian herb blend
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon lime juice
  • 2 cloves of garlic finely chopped

Instructions
 

Step 1: Marinate the Chicken

  • Combine the olive oil, adobo sauce, smoked chili powder, cumin, sea salt, black pepper, oregano, paprika, lime juice, and chopped garlic in a bowl. Mix well. Add the chicken to the marinade, ensuring every piece is well-coated. Let it sit for at least 15 minutes, or for extra flavor, refrigerate it for up to 4 hours.

Step 2: Preheat Your Grill or Skillet

  • While your chicken absorbs all those amazing flavors, preheat your grill or skillet over medium-high heat. A hot surface is crucial for searing the chicken and locking in moisture.

Step 3: Cook the Chicken

  • Once heated, place the marinated chicken on the grill or skillet. Cook for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C). The char from the grill adds an excellent touch.

Step 4: Rest and Slice

  • After grilling, transfer the chicken to a plate and cover it with foil. Let it rest for about 5 minutes. This step helps keep the juices locked in, making every bite tender.

Step 5: Serve and Enjoy
