- 1 pound savory ground breakfast sausage
- 2 large starchy russet potatoes peeled and shredded
- 6 large eggs lightly whisked
- 2 tablespoons cold-pressed extra-virgin olive oil
- 1 teaspoon coarse sea salt
- ¼ teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- 4 scallions green onions, finely chopped
- 6 10-inch soft flour tortillas
- 2 cups sharp cheddar cheese freshly grated
- 2 avocados ripe, pitted, and thinly sliced
- ½ cup fire-roasted salsa
- ¼ cup finely chopped fresh cilantro
Step 1: Cook the Sausage
In a skillet, heat your olive oil over medium heat. Add the ground breakfast sausage, and cook it until it’s browned and crispy. This usually takes about 5 to 7 minutes. Make sure to break it up into small pieces as it cooks.
