Breakfast is often touted as the most important meal of the day, and let’s face it, who doesn’t want to start off with something tasty? For me, the QDOBA breakfast burrito has become a staple. It’s not only satisfying but also versatile.

Ingredients
  

  • 1 pound savory ground breakfast sausage
  • 2 large starchy russet potatoes peeled and shredded
  • 6 large eggs lightly whisked
  • 2 tablespoons cold-pressed extra-virgin olive oil
  • 1 teaspoon coarse sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 4 scallions green onions, finely chopped
  • 6 10-inch soft flour tortillas
  • 2 cups sharp cheddar cheese freshly grated
  • 2 avocados ripe, pitted, and thinly sliced
  • ½ cup fire-roasted salsa
  • ¼ cup finely chopped fresh cilantro

Instructions
 

Step 1: Cook the Sausage

  • In a skillet, heat your olive oil over medium heat. Add the ground breakfast sausage, and cook it until it’s browned and crispy. This usually takes about 5 to 7 minutes. Make sure to break it up into small pieces as it cooks.

Step 2: Prepare the Potatoes

  • Once your sausage is cooked, stir in the shredded russet potatoes. Sprinkle on the sea salt, black pepper, smoked paprika, and garlic powder. Cook the mixture, stirring occasionally, until the potatoes are golden brown and tender—around 10 to 15 minutes.

Step 3: Whisk the Eggs

  • While the potatoes are cooking, whisk your eggs in a bowl until they’re well combined.

Step 4: Cook the Eggs

  • Push the sausage and potato mixture to one side of the pan. Add a little more olive oil if necessary. Pour your whisked eggs into the other side and scramble them until fully cooked. Combine everything in the pan once the eggs are done.

Step 5: Add Fresh Ingredients

  • Stir in the finely chopped scallions and half of the cheese into the mixture. This adds a great flavor and helps melt the cheese nicely.

Step 6: Assemble the Burritos

  • Take a flour tortilla and lay a generous scoop of your breakfast mixture in the center. Add sliced avocados, salsa, and the remaining cheese on top of the mixture. Fold the sides in and roll it up tightly from the bottom. Repeat this step until you’ve filled all your tortillas.

Step 7: Heat the Burritos

  • If you like your burritos crispy, you can return them to the skillet. Heat them on each side for about 2-3 minutes until they are golden brown and heated through.

Step 8: Garnish and Serve

  • Slice the burritos in half, sprinkle with fresh cilantro, and serve with extra salsa on the side. Enjoy your creation!

  1. Use Leftover Ingredients: If you have leftover vegetables like bell peppers or spinach, throw them into the mix. It’s a great way to use what you have.
