  • 2 teaspoons homemade taco spice blend or store-bought
  • ½ teaspoon coarse sea salt or to taste
  • 1 teaspoon smoked paprika
  • 2 tablespoons rich tomato paste
  • cup chicken or vegetable broth
  • 2 cups steamed jasmine rice or basmati rice
  • 2 cups cooked or canned seasoned black beans rinsed and drained
  • 1 cup fresh Pico de Gallo or chunky tomato salsa
  • 1 ½ cups shredded Mexican cheese blend cheddar, Monterey Jack, and queso quesadilla
  • ½ cup creamy sour cream or tangy Mexican crema
  • ¼ cup chopped fresh cilantro

Instructions
 

Step 1: Sauté the Base
