  • 2 tablespoons hoisin glaze
  • 1 small garlic clove minced
  • 1 teaspoon rice vinegar

Step 1: Prepare the Ingredients

  • Start by slicing the chicken into thin strips. This ensures even cooking. Then, wash and slice your shiitake mushrooms and shred the cabbage. Have everything prep'd and ready to go because stir-frying happens quickly.

Step 2: Cook the Eggs

  • Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Once hot, pour in the beaten eggs. Scramble them gently until just set, then transfer to a plate and set aside.

Step 3: Stir-Fry the Chicken

  • In the same skillet, add another tablespoon of oil. Increase the heat to high, and add in the sliced chicken. When it’s almost cooked through—about 3 to 4 minutes—add in the minced garlic, grated ginger, and shiitake mushrooms. Stir-fry for another 2 minutes.

Step 4: Add Vegetables and Sauce

  • Now, toss in the shredded cabbage, soy sauce, sesame oil, and hoisin glaze. Stir everything together and cook until the cabbage has softened, around 3 minutes.

Step 5: Combine Everything

  • Return the scrambled eggs to the skillet, and gently mix everything together. Let it cook for an additional minute or two to warm through.

Step 6: Serve with Pancakes

  • Warm the pancakes according to the package instructions. Serve the Moo Shu Chicken mixture in a bowl, allowing everyone to fill their own pancakes.
