Ingredients
  

Shortbread Crust

  • ¼ cup granulated sugar
  • 1 tablespoon egg white
  • 6 tablespoons unsalted butter at room temperature
  • 2 ¼ cups finely ground almond flour
  • 1 teaspoon lemon essence
  • 2 tablespoons finely chopped lemon zest

Frosting

  • 4 ounces softened cream cheese
  • 1 teaspoon lemon essence
  • 2 tablespoons vanilla-flavored Greek yogurt
  • 4 tablespoons room-temperature butter
  • 1 ½ – 2 cups confectioners’ sugar adjusted for consistency
  • 1 tablespoon honey

Topping:

  • Fresh fruit of choice

Instructions
 

Step 1: Prepare the Crust

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine granulated sugar and egg white, and whisk until mixed well.
  • Add the butter and continue to mix until creamy.
  • Gradually add almond flour, lemon essence, and chopped lemon zest.
  • Mix until a dough forms.
  • Press the dough evenly into a baking pan lined with parchment paper.
  • Bake for 15-20 minutes or until golden brown.
  • Cool completely on a wire rack.

Step 2: Make the Frosting

  • In another bowl, beat the softened cream cheese, lemon essence, and Greek yogurt until smooth.
  • Add the butter and mix well.
  • Gradually add confectioners’ sugar until desired consistency is reached.
  • Lastly, whisk in the honey to combine.

Step 3: Assemble the Pizza

  • Once the crust is cool, spread the frosting evenly over the top.
  • Arrange your chosen fresh fruits beautifully over the frosting.
  • Chill in the fridge for at least an hour before serving.
