Step 1: Gather Your Ingredients

  • First things first, gather all your ingredients. This step saves you from scrambling around the kitchen later. Prepping everything beforehand allows for a smoother cooking experience and is a fun part of the process.

Step 2: Prepare Ingredients for Blending

  • Start by washing your fresh cilantro thoroughly under cold water and patting it dry. For the avocado and lime, cut them in half and scoop out the avocado flesh and zest the lime, making sure not to get the bitter white part. This prep makes blending a breeze.

Step 3: Add Ingredients to Food Processor

  • Place your prepared cilantro, avocado, lime juice, and half the lime zest, garlic, and green onion into the food processor. Add the Greek yogurt, olive oil, and water, and sprinkle in a pinch of salt and ground cumin.

Step 4: Blend Until Smooth

  • Secure the lid on the food processor and pulse the mixture on high speed. You’re aiming for a creamy texture, where all ingredients are fully combined. If you find the consistency to be too thick for your liking, gradually add more water until you achieve your desired texture.

Step 5: Taste and Adjust

  • Once blended, taste your sauce and adjust the seasoning if necessary. If you want a little more brightness, feel free to add more lime juice or zest.
