  • 4 large eggs whisked until frothy
  • 1 cup golden flaxseed meal or any variety you prefer
  • 1/3 cup unsweetened almond milk or your choice of dairy or non-dairy milk

  • 1 teaspoon pure vanilla extract
  • 1 tablespoon honey
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/8 teaspoon sea salt

Step 1: Mix the Wet Ingredients

  • Whisk the eggs until they are frothy. Once that’s done, add the almond milk, lemon juice, vanilla extract, and honey. Blend these together until they are well combined.

Step 2: Prepare the Dry Ingredients

  • In a separate bowl, combine the flaxseed meal, baking soda, sea salt, ground nutmeg, and cinnamon. Mix them well to ensure the spices are evenly distributed.

Step 3: Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture. Stir until everything is well combined but be careful not to overmix. The batter should be slightly thick but pourable.

Step 4: Cook the Pancakes

  • Heat a non-stick skillet over medium heat. Pour a ladle of batter into the skillet, forming small to medium-sized pancakes. Cook for about 2-3 minutes or until bubbles start forming on the surface. Flip and cook for another 2-3 minutes.
