- ½ cup fresh mint leaves roughly chopped
- 1 tablespoon toasted sesame oil
- 3 scallions thinly sliced
- ¼ cup uncooked jasmine rice or Thai glutinous/sweet rice
- 1¼ pounds ground chicken freshly ground preferred for best texture
- 2 tablespoons premium fish sauce
- 3 shallots thinly sliced (divide into two portions)
- 1 tablespoon finely chopped lemongrass
- 2 tablespoons neutral vegetable oil
- Salt to taste optional
- Juice of 2 fresh limes
- ¼ cup fresh cilantro roughly chopped
- 1 –2 Thai bird’s eye chilies thinly sliced
- ½ teaspoon granulated sugar
- Butter Bibb, or Boston lettuce, washed and thoroughly dried (can also serve with sticky rice)
Step 1: Cook the Rice
Start by cooking the jasmine rice. In a small pot, add water and bring it to a boil. Once boiling, reduce the heat to low, cover it, and simmer for about 15 minutes, or until tender. Let this cool slightly afterward.
Step 2: Prepare the Chicken
In a large skillet over medium heat, warm the vegetable oil. Add the ground chicken and cook until it turns golden brown, stirring occasionally. We’re looking for a bit of texture here, so don’t rush it!
Step 3: Add Shallots and Lemongrass
Step 4: Season the Mixture
Sprinkle in the fish sauce, lime juice, and sugar. Stir well to combine, ensuring the chicken absorbs all those juicy flavors.
Step 5: Mix in the Herbs
Remove from heat and fold in the fresh mint, cilantro, scallions, and the bird's eye chilies. This is where the magic happens. Each herb adds a layer of freshness.
Use fresh herbs. Freshly chopped herbs make a huge difference in flavor and texture.
Adjust heat levels. If you’re not fond of spice, start with one chili and taste before adding more.
Rest the mixture. Allow the chicken mixture to cool slightly before serving for maximum flavor intensity.
Experiment with protein. If you prefer, swap ground chicken for turkey or even tofu for a vegetarian version.
Make ahead. You can prepare everything in advance and assemble right before serving, making it perfect for parties.
