  • 2 to 2 ½ pounds boneless beef chuck roast or brisket cut

  • 3 tablespoons fresh ginger finely minced
  • 5 tablespoons savory fish sauce
  • 2 garlic cloves finely minced

For the stew base:

  • 8 cups water
  • 2 cups pure coconut water or coconut juice
  • 3 tablespoons cooking oil vegetable or canola
  • 1 whole stalk lemongrass bruised
  • 2 stalks lemongrass finely minced, discard tough woody parts
  • 8 garlic cloves minced
  • 1 medium onion thinly sliced
  • 4 tablespoons concentrated tomato paste
  • 2 whole star anise pods
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon mild chili powder
  • 1 tablespoon smoked paprika
  • 7 large carrots
  • 1 teaspoon kosher salt
  • 3 tablespoons soy sauce light or regular
  • 3 tablespoons chili oil
  • 1 teaspoon grated lime zest

To serve:

  • Lime wedges
  • ½ cup thinly sliced raw red onion
  • ¼ cup roughly chopped fresh cilantro leaves
  • Wide rice noodles or egg noodles
  • ½ cup fresh Thai basil leaves

Instructions

Step 1: Prepare the Beef

  • Start by cutting your beef into bite-sized pieces. In a bowl, combine the Chinese five-spice powder, dark brown sugar, minced ginger, fish sauce, and garlic. Toss the beef bits in this mixture, coating them evenly. Let this sit for at least 30 minutes.
  • If you have the time to marinate it longer, even overnight is better! Marinating allows the flavors to penetrate the meat, which is delightful.

Step 2: Start the Base

  • In a large pot, heat the cooking oil over medium heat. Add the sliced onion and sauté until they are translucent. This should take about 3-5 minutes.
  • Next, throw in the minced garlic and lemongrass. Cook them together until fragrant. Your kitchen will start to smell amazing, so try not to gobble everything up at this point!

Step 3: Brown the Beef

  • Increase the heat to medium-high. Add the marinated beef to the pot. Sear the beef until it's browned on all sides, which should take about 5 to 7 minutes. Once that browning occurs, you’re developing flavors that will elevate the dish.

Step 4: Create the Liquid Gold

  • Pour in the water and coconut water. Stir in the tomato paste, star anise pods, black pepper, chili powder, and smoked paprika. The combination will result in a luscious broth that’s just waiting to merge with the beef. Bring it all to a gentle boil.

Step 5: Let it Simmer

  • After the pot reaches a boil, reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours. Remember, patience is key. You’ll know it’s time when the beef becomes fork-tender and each bite melts in your mouth.

Step 6: Add Carrots & Spice Up the Flavor

  • Once the beef is ready, add the carrots, kosher salt, soy sauce, chili oil, and lime zest. Stir gently. Allow this to cook for another 30 minutes, just until the carrots are tender yet still crisp.

Notes

  • Choose the Right Cut: Opt for cuts with adequate fat content, like chuck or brisket. They stay tender during cooking.
  • Marinate the Beef Longer: Allowing the beef to marinate overnight boosts the flavors dramatically.
  • Don't Rush the Simmer: Slow cooking is your friend. It enriches the flavors and makes the meat more tender.
  • Garnish Generously: Fresh herbs are essential—don’t skimp! They bring brightness to the dish.
  • Experiment with Spices: Feel free to adjust the spices to your liking. If you enjoy heat, don’t shy away from adding more chili!
